The hot dry summer summer made for some beautiful more ripe fruit complexity. 100% hand picked Chardonnay on 25 February 2019. Delightfully fresh, with gorgeous natural acidity. Method-Traditionnelle. Perfect with chilli crab or that special occasion.
Winemaking
Winter 2019 was cold, followed by excellent rainfall in the late Spring. Uninterrupted flowering meant that we were seeing generous yields with the hot dry conditions in January and February driving gorgeous fruit complexity. 100% handpicked Chardonnay on 25 February 2019 and chilled in the cool room overnight. De-stemmed and hydraulic basket pressed to 300 bar to ensure gentle extraction of juice. 80% free run juice. Chardonnay was inoculated with a 9 day fermentation period. Juice was placed in the cool room to control ferment temperatures.
Home Block
Steels Gate Vineyard, Chardonnay block. Situated at 230m above sea level, the Chardonnay was planted in the early 1980’s on an undulating, south-west facing slope on friable grey loam soils. Completely unirrigated and hand nurtured. Surrounded by National Park.
